Blackened Tilapia and Rice Pilaf

As promised here is the Tilapia recipe from dinner last night. I reduced the paprika in the recipe to 1 tablespoon because I thought 2 would be way too spicy. I only used 1/2 tsp of the ground red pepper (cayenne). Don’t worry the seasoning still has a kick! Also, I didn’t think 1 cup of butter was necessary to coat the fish, so I reduced it to about 1/4 cup. Enjoy!

Blackened Grilled Tilapia

  • 4-6 Tilapia fillets
  • 1 Tablespoon Paprika
  • 2 Teaspoons salt
  • 2 Teaspoons lemon pepper
  • 1 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon ground red pepper
  • 1 1/2 Teaspoon dried, crushed basil
  • 1 Teaspoon onion powder
  • 1 Teaspoon dried thyme
  • 1/4 cup unsalted butter, melted

Preheat grill pan on medium high heat. Mix all the seasonings in a bowl. Dip each fillet in melted butter, coating it well. Then, dip each fillet in the seasoning mix (I only coated one side of the fish). Cook fillets for about 3-4 minutes on each side or until fish flakes easily and is opaque.

This fish was great the next day for lunch!
